THE MIRAZUR, THE SUBTLETY OF A GREAT CHEF

At Cuisse de Grenouille, we like the spirit of travel and adventures. It's what entices us about the success of the chef Mauro Colagreco and his restaurant Le Mirazur in Menton, included as one of the best restaurants The World's Fifty Best restaurants, the excellent and controversial guide, and indeed the best French restaurant included in the rankings!

Shaped by his experiences in famous restaurants such as Louiseau at Saulieu and L'Arpège with Passart (who first introduced his taste for vegetables), Mauro is a simple man who likes to surprise his customers with his trademark subtle cooking. Less methodical than his contemporaries in inventive food, he has imagined up dishes coming from his own vegetable patch, local crops and local fishmongers - dishes free from traditional culinary boundaries and rules. You can find, for example, fruit in his starters as well as vegetables and spices in his desserts. If his dishes are works of art, their incredible taste is splashed across the canvas in an enormous explosion - works of art that we encourage you to appreciate on your journey to Italy via the Riviera!

If you are Parisian, he's just put his name to the menu of Grand Coeur, a very chic brasserie in the Marais, itself a chic area of Paris. We had the pleasure of sampling its food with Mauro himself alongside... a great experience indeed.
